Pad Thai Salad

Ingredients

Salad:
  • 1 cup cabbage, shredded
  • 4-5 large leaves of swiss chard, sliced/chiffonade
  • ½ yellow pepper, sliced thin
  • ½ cup bean sprouts
  • ¼ cup chopped cilantro
  • ¼ cup chopped cashews
  • 2 green onions, chopped
  • 2 small chili peppers, diced
  • 1 egg, scrambled

Dressing:
  • juice of ½ a lime
  • ½ teaspoon white wine vinegar
  • 1 small garlic clove, minced
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger
  • 2 tablespoons almond butter
  • 2-3 tablespoons almond milk

Instructions
  1. Arrange salad ingredients in a bowl.
  2. Whisk together dressing ingredients in a small bowl. Start with 2 tablespoons almond milk and whisk in more as needed to get desired consistency.
  3. Pour dressing over salad and enjoy.
